Ingredients

  • 1 cup honey

  • 1 cup water

  • 2 cinnamon sticks

  • 4-5 whole cloves

  • 2 star anise

  • 3-4 whole cardamom pods

  • long slice of orange peel

Directions

  • Combine honey and water in a small saucepan over medium heat.
  • Once combined and starting to warm, add in spices.
  • Bring to a simmer, simmer on low for 5 minutes. Take off heat and strain out spices.
  • Store in airtight container in the fridge for up to 3 weeks.

  • 1 ½ cup water

  • 3 single-serve earl grey tea bags

  • 1 ½ cup granulated sugar

Directions

  • Steep earl grey tea in boiling water for 6 minutes.
  • Add to a pot with sugar and bring to a boil. Turn heat down to a simmer and cook, stirring frequently until thickened, 15-20 minutes.
  • Store syrup in a glass jar/container with an airtight lid in the refrigerator for up to two weeks.

    • 1 jalapeno roughly chopped no stems- about eight pieces

    • 1 lime cut into quarters or eighths

    • 1 cup water

    • 1 cup sugar

    Directions

    • Combine all ingredients in a non reactive sauce pan.
    • Bring to a boil and then lower heat and simmer uncovered for another 45 minutes to an hour swirling or stirring occasionally
    • Allow to cool
    • Strain into a clean glass jar

    • Peels of 4 lemons, trimmed of excess white pith

    • 1 cup granulated sugar (7 ounces; 200 g)

    Directions

    • In a medium bowl or mortar and pestle, muddle lemon rinds with sugar until lemon oils begin to be expelled.
    • Let stand, stirring occasionally, until a fragrant syrup forms, at least 1 hour and up to 1 day.
    • Transfer oleo saccharum to a container (either first straining peels out or leaving them in) and refrigerate until ready to use.

    Ingredients

    • 2 cups water

    • 2 cups brown sugar

    • 2 cinnamon sticks

    • 8 allspice berries

    • 6 whole cloves

    • 1 fresh ginger (inch long, about 40 grams)

    Directions

    • In a wide saucepan (medium size), bring to a boil sugar and water. Stir occasionally to help the sugar melt. Once boiling, reduce the heat and add the spices and ginger that you have peeled and sliced.
    • Simmer for 20 minutes or until the syrup is infused with spices (taste with a spoon to see if you like it. Leave for longer, if needed).
    • Strain the spices and ginger and pour into a sterilized bottle.

    • 1 cup fresh raspberries

    • 2 cups sugar

    Directions

    • Add the sugar and water into a saucepan and bring to a boil.
    • Once it is boiling, remove from the heat and allow to cool.
    • When cool, add in raspberries.
    • Allow the syrup and raspberries to steep for 24 hours.
    • After 24 hours, shake to break up the berries and then muddle berries to fully release the juices.
    • Strain through a fine mesh strainer.
    • Store in an airtight container in the fridge for up to 2 weeks.
